Château Demonpère - CUVée prestige WHITE - A.O.p. Côtes de Provence - ORGANIC
This white cépage (wine variety) grown on our estate is Vermentino (also known as Rolle). Under the very sunny skies of the Massif des Maures mountains, the flavor of these grapes takes on hints ripe apricot and exotic fruits.
On one part of the estate, the soil is somewhat deeper and requires less water maintenance. Although the composition is very similar to other parts of the estate, the deeper soil is actually richer, making the Vermentino vines leafier. The grapes are better protected from the sun and preserve more fresh flavor.
Cool temperatures are better for harvesting. This is why we pick our grapes early in the morning. A tubular heat exchanger also allows us to save a few precious degrees during picking. Next, to get the richest flavor from the grape skins, we perform skin-contact maceration (ie we leave the skins in contact with the juice for a few hours, just before pressing). Controlled by a skilled taster, this operation extracts aromatic precursors in a few hours. This is essential to obtaining an expressive wine, as from the start of fermentation. Fermentation is carefully temperature-controlled, to give the flavors time to develop under the action of the yeast.
Château Demonpère Cuvée Prestige wines mature for a short period (three months) in stainless steel vats to develop freshness and elegance.
